Work in a kitchen alongside bakers and chefs to prepare foods and baked goods, including pastries, breads, pitas and muffins, with a decidedly local flavour.  You will learn from restaurant owners and food businesses how to source local foods for your event, institution, school cafeteria, or faith-based gatherings. Discuss the issues, challenges and opportunities in supporting local economies, reducing your carbon food footprint, and eating healthily.

 

Leadership

Doug Brown

Doug Brown is the owner and chief baker for Oak Haven Bakeries located near Annapolis Royal.  Doug mixes and kneads all of the bread by hand. And these aren’t fluffy white loaves. Instead, they are naturally-leavened hearty breads made with spelt and kamut flour. Doug also makes pita breads, granola, and sweets, and all of the baked goods are certified organic by Maritime Certified Organic Growers. For Maritime consumers who want to buy local baked goods, Oak Haven bread is the perfect choice. Not only is made by a Nova Scotian, but the grain is milled in New Brunswick, the maple syrup for the granola is from Maritime trees, and the fuel used to bake the bread isn’t electricity or propane, but is local wood. Even the courier used to deliver the bread is a local courier, not a national company with headquarters in central Canada.  Doug is also the Maritimes distributor for Speerville Flour Mills which is the premier local organic grains and flours producer in the Maritimes.  Speerville located in New Brunswick, supplies products to bakeries, health food and grocery stores throughout the region. 

Sean Gallagher

Sean Gallagher started his small catering company providing sandwiches to students at Dalhousie.  He now runs the Local Source Market, a restaurant and shop in Halifax specializing in local produce and goods. Seasonal fruits and vegetables, free-range meats, cheeses, organic artisan breads, and homemade food are all on offer. Customers can indulge in pastries, panini, soups, and organic fair trade coffee right on site.  "We're committed to helping sustain a vibrant local food economy and connect urban dwellers with rural communities.”

Lil MacPherson

Lil MacPherson is an environmental enthusiast and the owner of the highly acclaimed Wooden Monkey organic and local food restaurant in Halifax.  She is the co-founder of Balle NS, is an organization that aims to connect local, eco friendly businesses and encourage them to support and trade together. 

Av Singh

Av Singh is the Organic Specialist for Agrapoint and provides technical assistance and support to local producers.  Av is also the founder of the Christmas Supper in Tatamagouche program which serves hundreds of local families with a locally prepared food extravaganza for the holidays.

Trudy Watts

Trudy WattsTrudy Watts, Program Resource Group (PRG) facilitator. Trudy has been involved in anti-nuclear, environmental justice, First Nations and Latin-American solidarity, Green Party and diversity campaigns since the 1980's.

Trudy is an avid gardener and herbalist. Tatamagouche Centre's Living Traditions Herb Garden, started by Trudy in 2006, expresses her interest in honouring cultural knowledge of medicinal plants.
