Tracing our roots through food! Mexican Cuisines.

Elvira Prado Robles grew up in Puerto Vallarta, Mexico where she discovered her love of food and cooking from her grandmother who ran a Cantina for local construction workers. She attended gastronomy school close to home before moving to Spain in 2012 to continue her studies. In 2019 Elvira came to Antigonish in hopes to share authentic Mexican cuisine with Nova Scotians.

The evenings meal will include:

Bistec Ranchero or a la Mexicana is a traditional rural Mexican dish that is rich in flavors and textures. It is made with thinly sliced beef, a smoky tomato sauce, and mixed vegetables.

Side: Mexican Rice and Handmade Corn Tortillas

Corn Tortillas made from maseca mixed with salt, pepper and an herb called Epazote, pressed with a tortilla press and cooked dry on a heated surface.

Plain white rice toasted and left to cook in vegetable stock with onions, garlic, carrots and corn.

Salsa: Salsa de Cacahuate (peanut and chile sauce), Mexican chiles left to marinate with peanuts in oil (mild in spice)

Drink (instead of dessert): Horchata, Milk made from rice soaked in cinnamon.
